Apple Streusel Muffins

2 c all-purpose flour

1 c sugar

1 tbsp baking powder

1 1/4 tsp cinnamon

1 c apples, finely chopped

1/2 tsp baking soda

2 eggs

1 c sour cream

1/4 c butter, melted

1/2 tsp salt

Streusel Topping:

1/4 c sugar

3 tbsp flour

1/2 tsp cinnamon

2 tbsp butter

Preheat oven to 350°. In a large bowl, stir together flour, sugar, baking powder, cinnamon, salt, and baking soda. Set aside. In a small bowl, beat eggs, sour cream, and butter. Add all at once to dry ingredients. Fold in apples stirring only until slightly blended. Sprinkle topping on muffins and bake for 25-30 minutes. (makes 18 muffins)
