Skillet Cookies

1 stick margarine

1 c chopped dates

1 c sugar

2 eggs

1 tsp vanilla

2 c (heaping) Rice Krispies

1 c nuts

coconut

Melt margarine in large skillet. Stir in dates, sugar and eggs. Cook until thickened, stirring constantly. Add vanilla. Remove from heat. Stir in Rice Krispies and nuts, mix well. Spread 1/2 of the coconut on 2 sheets of foil. Pour 1/2 of the Rice Krispie mixture over coconut. Form into logs 12 to 15″ long. Repeat. 

May store in refrigerator for several weeks. Flavor improves after several days.
