Oatmeal Cookies

2 c shortening

2 c white sugar

2 c brown sugar

4 eggs

2 tbsp vanilla

3 c flour

2 tsp salt

2 tsp baking soda

6 c oats

Mix together. Roll into balls. Press down with glass dipped in sugar. Bake 350° 9-10 mins. Let cool before removing from baking sheet. 

Can use for ice cream sandwiches. Let freeze overnight – cover in foil.

Variations:

(1) 1 tsp cinnamon, 1 tsp cloves, 1 tsp allspice, 2 cups raisins

(2) 1 package Hershey’s SKOR bits

(3) 1 package butterscotch chips
