Chicken Salad
2 c chopped cooked chicken breast
1 c diced celery
1 cucumber, quartered, seeded, and chopped into bite size pieces
1/3 c chopped sweet onion
1/3-1/2 c mayonnaise
1 c Kraft Free Zesty Italian dressing
1/2 c sliced olives
12 oz Rotini pasta, cooked and drained
Marinate chicken breast in Italian dressing 1 hour. Chop celery, olives, cucumber, and sweet onion as directed above. Mix with pasta cooked to pkg instructions. Drain, rinse, and cool pasta. Add mayonnaise just until moistened. Chill for sveral hours. Tastes better the next day.Â
Yield: 8-10 servings.
